How to make delicious green tofu

In the general impression of people, tofu is white and made from soybeans. But in addition to this, there is also a kind of green tofu, which is green in color. So is the raw material also made of soybeans and then dyed green? In fact, the material of green tofu is completely different from tofu. Its raw material is a wild shrub called tofu shiitake, which is a common tree in southern Zhejiang and northern Fujian. Green tofu is made from the leaves of this tree through a series of processes.

How to make green tofu

Of course only the leaves are the real ingredient for making green tofu. If you are a person who likes wild fun, it is best to pick them yourself in the mountains. You can pick just the leaves or break off the branches. You don't have to worry about killing the goose that lays the golden eggs here, because the tofu tree has a strong regeneration ability. The treetops will grow continuously in spring, summer and autumn. After you pick them, it will soon sprout branches and leaves again, waiting for your next visit.

The production process of green tofu is very simple. Here is the production process of green tofu:

1. Pick the fresh green tofu leaves first;

Second, wash it several times (most of them are wild, but some are grown by farmers);

3. After cleaning, add an appropriate amount of water, enough to cover the green tofu leaves (if conditions permit, you can also use cold boiled water for better hygiene). Of course, the amount of water also determines the hardness of the green tofu after it is coagulated into blocks;

4. Start to rub repeatedly to rub out the juice in the green tofu leaves until it feels a little sticky;

5. Rub for about 20 minutes until the leaves are almost muddy.

6. Pick up the slightly larger leaves and leaf residues, squeeze out the juice and throw them away. For the leaf residues that cannot be picked up by hand, filter them with gauze or a filter.

7. Set the filtered green tofu juice aside, and evenly stir and pour in the prepared toothpaste water (the toothpaste water mainly plays a role in accelerating coagulation. Toothpaste contains calcium carbonate. It is recommended to use the cheapest Chinese toothpaste, which is white in color and the amount is only the size of a peanut);

8. After pouring in the toothpaste water, stir the mung bean curd juice quickly and evenly in a clockwise direction. About ten turns are enough! You can enjoy the food after ten minutes. (If you are worried that the green tofu juice has not completely solidified, you can insert a chopstick in the middle. If the chopstick stands upright, it means it is completely solidified. If the chopstick falls sideways, it means you need to wait a little longer, or the proportion of water is too much, causing the green tofu juice to be not hard enough and soft!)

9. The completely solidified green tofu is ready to be eaten.

Green onion stewed tofu

Ingredients: Main ingredients: 1 green onion, tofu cubes (green)

Accessories: 2 spoons of soy sauce, 1.5 teaspoons of salt, 0.5 spoons of chicken essence, 1 star anise, 1 spoon of starch, 2 slices of ginger

How to make green onion fried tofu

1. Prepare a square piece of green tofu. The color is so beautiful that I don’t want to cut it!

2. Cut it into square slices about 0.5cm thick.

3. Prepare green onion slices, add more green onions, ginger slices, and a star anise to enhance the flavor.

4. Heat more oil in the pan.

5. Fry the tofu over high heat until both sides are golden brown. Be careful not to burn it!

6. Remove from the oil and set aside.

7. Leave some oil in the pan, add star anise, ginger, and green onion and stir-fry until fragrant.

8. Add the fried tofu and stir fry evenly.

9. Pour enough water to cover the ingredients, bring to a boil, then cover and simmer on low heat for 2 minutes.

10. Add salt, chicken essence, light soy sauce and water starch, cook over high heat until thick, then serve!

11. Serve and start eating. The tofu is crispy on the outside and tender and flavorful on the inside. It’s so delicious!

Cooking tips: Don’t add too much water when cooking tofu, just enough to cover the ingredients.
