1.1 After soaking the dried black fungus in water, use kitchen paper to absorb the water and drain it for later use (black fungus with water in it will fry when put into the oil pan).

2.2 Peel the water chestnuts and cut into slices; smash the garlic, take only the roots of the coriander and cut into small pieces; cut the rice pepper into small pieces.

3. Heat the cooking oil in a wok until it is 50% hot, add the minced garlic and rice pepper and slowly stir-fry until fragrant.

4. Stir-fry the water chestnuts in oil for a few times.

5. Then add black fungus and stir-fry.

6. Stir-fry until the black fungus is slightly soft, add sugar, salt and coriander roots, stir-fry everything in the pan evenly, and finally add MSG and serve.
