Main ingredients: 1 pig's trotter. Side ingredients: 50g soybeans, 5 dried chilies, 15 peppercorns, 1 star anise, 1 scallion, 5 slices of ginger. Seasoning: 2 tablespoons soybean paste, 2 tablespoons soy sauce, 2 tablespoons cooking wine, 5 grams salt, 6 crystal sugars.

Preparation: Soak soybeans in clean water for half an hour in advance. Method: 1. Boil water in a pot, put in the pig's trotters after the water boils and blanch them until they change color, then remove and drain; 2. Add a little more oil than usual for cooking to the pot and heat it to 30% hot, keep it on medium or low heat, add dried chili peppers and peppercorns to fry until fragrant, then add rock sugar; fry the rock sugar until it melts, pour in the washed pig's trotters and stir-fry evenly; after the pig's trotters are colored, add onions, ginger and star anise; 3. Add cooking wine and soy sauce, continue to stir-fry on medium and low heat; stir-fry until the pig's trotters turn brown, add soybeans; add boiling water to cover 2/3 of the pig's trotters, and boil the soup over high heat; 4. Skim off the foam on the surface, add soybean paste, cover and simmer on medium heat for half an hour, until the pig's trotters can be easily pierced with chopsticks, add appropriate amount of salt according to personal taste.

First, burn the pig's trotter to remove the hair roots on the skin, soak it in warm water, scrape it clean with a knife, and split the pig's trotter in the middle with a knife;

2. Put the wok on the fire, add water, bring the water to a boil, put the pig's trotters in and scald them thoroughly, take them out and scrape them clean with a knife; 3. Wash the carrots and cut them into pieces; 4. Put a large casserole on the fire, add water and bring it to a boil, put the pig's trotters and red dates in, then simmer over low heat until they are 80% cooked, then add the carrots; 5. When the pig's trotters are soft and the soup is thick, add salt, MSG, cooking wine, pepper powder, adjust the taste, serve with the casserole, and it is ready to eat.
