The fillings of dumplings are also varied, and most vegetables and meats can be used as fillings. Although we rarely eat cucumber as a filling, it can be made into dumplings.

Cucumber is one of the most commonly consumed vegetables by the people. It is crisp, tender, fragrant, delicious and nutritious. It contains a variety of vitamins, making it an excellent product for skin care and beauty. It can effectively fight skin aging, reduce the formation of wrinkles, and prevent and treat cheilitis and angular cheilitis. Because it also contains trace elements such as chromium, it has the effect of lowering blood sugar. The bitter substance at the tail of the cucumber also has anti-cancer effects, and has the effects of clearing heat, quenching thirst, promoting diuresis and reducing swelling.

Material

Ingredients:

Wheat flour cucumber 1 cucumber, corn kernels, flour.

Excipients:

2 eggs, corn, appropriate amount of oil, salt, oyster sauce, and MSG.

Method 1

Wash the cucumber, grate it into thin strips, then chop it with a knife, sprinkle a small spoonful of salt on it, and marinate it to remove the moisture. Squeeze out the cucumber juice, do not pour out the cucumber juice

Beat the eggs

Heat the pan, pour in the oil, pour in the eggs, stir quickly with chopsticks, and pour out quickly when the eggs solidify.

Spread out and cool. If it's still too big, cut it into smaller pieces.

Puree the corn kernels in a blender

Put all ingredients together. Add salt, chicken essence and oyster sauce and mix well.

Add cucumber juice to flour and let stand for more than half an hour. Knead into smooth dough, roll into thin strips, and pinch into small dough pieces

Roll the dough, fill it with stuffing, press it down with the back of a spoon and wrap it up.

Boil water in a pot, put the dumplings in, and use the back of a spoon to gently push along the edge of the pot to prevent them from sticking.

Cook the dumplings until they float and their bellies are inflated. Because dumplings are vegetarian, they are easy to cook.

Method 2

When making the filling, grate the cucumber into thin strips and cut it slightly, squeeze out the water. Do not throw away the squeezed water, keep it in a bowl for later use. Beat two eggs with appropriate amount of salt and fry them in a frying pan, breaking them up as you go. The finer the better. Let them cool after frying. If you like rich fillings, you can also add some tofu.

Then add five-spice powder, chicken essence, chopped green onion and ginger to the cooled eggs, tofu and cucumber shreds, mix well and set aside. Adding cucumber water when kneading the dough will not only make the dough more chewy but also taste better.
