Western beef soup recipe

1. Peel the tomatoes first. Here is a little trick. Use a knife to gently make a cross at the bottom of the tomato to cut the skin.

2. Put it in boiling water for about ten seconds until the skin falls off as shown in the picture, then put it in the pot and tear off the skin.

3.Cut the tomatoes into small pieces.

4. Cut the beef shank (or beef chunks) into 1cm cubes.

5.Chop the onion into small pieces.

6. Put it in water with cooking wine and ginger and blanch it for about ten seconds until it changes color and foam appears. Remove from the water and set aside.

7. Add a little corn oil to the hot pan, turn to medium heat, add the tomato pieces and stir-fry slowly for two minutes, then add the tomato sauce and continue stir-frying for a while.

8. Add beef cubes and rice, stir-fry for a while, then add cooking wine.

9. Pour enough water to completely cover the ingredients, bring to a boil over high heat and transfer to a soup pot.

10. Add two bay leaves and two dried chilies, and simmer over low heat for more than an hour until the tomato chunks are no longer formed and the beef chunks can be pierced with chopsticks.

11. Heat the pan to 60%, add butter and onion and stir-fry continuously until fragrant. Pour into the soup pot, simmer on low heat for ten minutes, then turn off the heat and simmer for ten minutes. Sprinkle black pepper and salt to taste and remove from heat.
