1. Cut the chicken into pieces, wash it with clean water to remove the blood , smash half a head of garlic, cut half of the green onion into oblique slices, cut the ginger into large slices, add cooking wine, light soy sauce, chicken essence, mix well and marinate for half an hour

2. Cut green pepper and onion into strips

3. Cut the lettuce into dice and cut the celery into sections. Set aside

4. Take out half of the pepper, cut it into small pieces with scissors, and keep the remaining half whole. Prepare half a head of garlic and cut the remaining green onions into sections.

5. Heat oil in a pan. When the oil is 60% hot, add the chopped red pepper and fry until fragrant. Add the green pepper and onion and stir-fry for a while.

6. Add chicken pieces and stir-fry continuously. Meanwhile, add light soy sauce and two spoons of bean paste. Stir-fry until the chicken skin turns bright yellow, then add hot water to cover the chicken.

7. Pour the remaining seasoning in step 4 into the pot. Add a little soy sauce, vinegar, a little sugar, pepper, beer, (and a little homemade red oil).

8. After boiling over high heat, change to medium heat and simmer for 10 minutes. Then pour the lettuce and celery into the pot and continue to cook over high heat for 5 minutes.

Tips

1. There is no need to blanch the chicken, because the meat will become tighter after blanching, and it will be more difficult to marinate.

2. Because this is a dish with a stronger flavor, it is better to use green onions. You can adjust the amount of materials yourself.

3. Use cooking wine when marinating and beer when cooking. This can clear the heat, remove the fishy smell, and avoid a strong smell of alcohol.

4. Because soy sauce, dark soy sauce and bean paste are all salty, I didn’t add salt. You can add a little salt according to your taste, otherwise it will be very salty.

5. Vinegar is added to make the meat more tender, so just add a little bit, about the amount of vinegar you use for soup at home, about one and a half spoons.
