Southerners generally like to grow rice because the climate there is relatively humid, while northerners like to grow wheat. Therefore, there are many particularly famous pasta in the northern region of our country, which has always been yearned for by everyone. So what are the complete lists of pasta in our country?

Noodles are a very ancient food, which originated in China and has a long history. The earliest record appeared during the Eastern Han Dynasty, more than 1,900 years ago. The earliest physical noodles were discovered by scientists from the Institute of Geology and Geophysics of the Chinese Academy of Sciences. On October 14, 2005, while conducting a geological survey in Lajia Village, Minhe County, Qinghai Province, in the upper reaches of the Yellow River, they found an upside-down bowl 3 meters underground in a floodplain sediment. The bowls are filled with yellow noodles, the longest of which is 50 centimeters long. By analyzing the composition of the substance, the researchers found that this bowl of noodles was about 4,000 years old, which greatly advanced the history of noodles.

Noodles were originally called "bing". "Water bing and boiled bing" were the forerunners of Chinese noodles - "bing means "bing", which means to combine flour with water" (quoted from Liu Xi's "Shi Ming"), which means that foods made by mixing flour with water are called "bing"; noodles or noodle blocks boiled in water are also called "bing". There are records of noodles in different dynasties. There are historical records from the early Eastern Han Dynasty, the Wei, Jin, Southern and Northern Dynasties, to the late Tang, Song, Yuan, Ming and Qing Dynasties. But at first there was no unified name for noodles. In addition to the common water noodles, boiled cakes and soup cakes, there were also names such as water-inducing cakes, butuo and huotuan. The term "noodles" was not officially used until the Song Dynasty. "Noodles" are long strips, but there are countless varieties, such as cold noodles, warm noodles, plain noodles, fried noodles... all are "noodles". The variety of ways to make noodles is also astonishing. Noodles can be squeezed, cut, plucked, sipped, rubbed, pressed, rubbed, drained, and pulled... Chinese noodles are not only an economical staple food, but also a fine delicacy that can be enjoyed in formal occasions. According to historical records, many dignitaries liked to eat noodles and would use noodles to entertain guests.

1. Shanxi noodles: Types include knife-cut noodles, fish noodles, dipping noodles, buckwheat noodles, oat noodles, fried noodles, minced qu, multi-grain steamed bread, cat ears, and fried cakes.

2. Shaanxi noodles: Types include oil-splashed noodles, Shaanxi pulled noodles, mixed sauce noodles, hand-rolled noodles, lo mein, roujiamo, and hard-noodle steamed buns.

3. Jiangsu noodles: Types include Wuxi pork rib noodles, Suzhou fried eel noodles, Shuangru gluten noodles, Wuxi steamed dumplings, and fermented glutinous rice meatballs.

4. Sichuan noodles: Types include Dandan noodles, Songsao noodles, braised beef noodles, saozi noodles, and pot cakes.

5. Northeastern noodles: Types include Korean cold noodles, Yangchun noodles, handmade dumplings, red bean paste cakes, corn cakes, chive boxes, and pies.

6. Henan noodles : types include knife-cut noodles, casserole noodles, mixed noodles, and sliced ​​noodles.

7. Cantonese noodles: Types include Cantonese wonton noodles, Yi noodles, and fried dough sticks.
