How to make stewed noodles

1. Add a teaspoon of salt to 500 grams of flour and 250-300 ml of warm water and knead into dough.

2.1 After the sugar is ready, take out the noodles and flatten them with your fingers. Grab both ends of the noodles, slap the chopping board up and down, and pull them into long wide noodles.

3.2 Flatten the dough and cut it into strips one finger wide; spread the cut strips with blended oil and place them on a plate, cover with wet towel sugar for 1 hour, or wrap with plastic wrap and refrigerate for 2 hours. (Cannot be frozen)

4.1 Dice tomatoes and green peppers, and chop green onions.

5.2 Dice the onion and mince the garlic.

6.1 Heat the pan and add oil, stir-fry chopped onion, ginger and garlic, then add all the ingredients and stir-fry; finally, add the diced meat and stir-fry, add 2 tablespoons of bean paste, a little salt, 1 tablespoon of soy sauce, 2 tablespoons of cooking wine, and 1 tablespoon of sugar. Pour a large bowl of water and bring to a boil, add half a teaspoon of chicken stock, mix well and turn off the heat.

7.2 Dice the dried tofu and pork.

8.1Tear the wide noodles into 1-inch long pieces and put them into boiling water.

9.2 The meat sauce topping is ready, put it in a container and set aside.

10. Cook over low heat first, and after all the dough pieces are pulled, turn to high heat and cook until they float.

11. Put some chopped green onions, oil, 1 teaspoon of light soy sauce, a little vinegar and chicken essence in a bowl, and pour in a large spoonful of boiling water.

12. Scoop out the cooked noodles and pour them into a bowl.

13. Spoon a large spoonful of meat sauce on the noodles and mix well. A bowl of soft, smooth, fresh and delicious stewed noodles is ready.
