How to make Shaanxi Saozi noodles

For everyone, when they reach a certain age, they have to get married and have children, and then they will face frequent visits from relatives and friends. When relatives and friends come to visit, decent meals are essential. If you can't do it, wouldn't it be embarrassing? Well, now I will teach you how to make Shaanxi sauerkraut noodles.

1. Add a little salt to the flour and slowly pour clean water into the flour bowl and stir.

2. Knead into a smooth and slightly hard dough and place in the refrigerator for 20 minutes for later use.

3. After taking out the dough, roll it into thin slices, sprinkle with flour and stack it into several layers.

4. Cut into thin noodles, shake and set aside.

5. Slice the tofu and dice the day lily.

6. Heat the oil in a pan, put the tofu in and fry until golden brown, then remove from the pan and drain the oil.

7. Cut the tofu into thin strips and set aside.

8. Chop the pork into minced meat.

9. Place a pot on the fire and heat a proper amount of oil, pour in the minced pork and stir-fry until it changes color, add soy sauce, dried chili segments, salt, white sugar, and minced ginger and stir well.

10. Add water and bring to a boil, then add day lily, star anise and cinnamon and boil.

11. Add fried tofu strips, soy sauce, vinegar and salt and cook for a while.

12. Remove from heat and sprinkle in chopped green onion to make the臊子汤.

13. Bring water to a boil, add the noodles, stir and cook until cooked through, then remove from the pot and serve in a bowl.

14. Pour the臊子 soup on top and it becomes臊子面.
