After taking it out of the steamer, break it up and cool it down until it is not hot to the touch (about 35℃). If the rice seems too dry or undercooked, sprinkle a small amount of water on the rice and steam it again. 12. First put the cooled rice into a sterilized container, then add about 200 ml of cold boiled water and stir evenly. 13. Pour the dispersed koji into the glutinous rice. 14. Stir the glutinous rice evenly. 15. Then dig a round hole in the center of the rice. (To make 500 grams of glutinous rice or rice, about 200 ml of cold boiled water is needed. However, if the glutinous rice is too hard after cooling, you can add more cold boiled water; if it is too soft, you can add less cold boiled water; the amount of wine yeast can be configured according to the instructions on the package of the wine yeast you purchased) 16. Put the container with glutinous rice into the rice wine machine, select the rice wine function, and then set the timer (usually 30-36 hours). 17. Fermented rice wine. 18.
