If the starch comes into contact with water and air, it will change color, just like when we peel potatoes with a knife and leave them in the air for a period of time, the potatoes will turn black. So which foods contain high starch?

Vegetables and fruits do not contain starch. Rice and flour have the highest starch content. However, the fructose in fruits is also converted into absorbable sugar, and starch is eventually converted into monosaccharides to be absorbed and utilized by the human body. Therefore, we can only compare which one has a lower content.
