How long to steam black fish

Normal fish should be steamed for 5-8 minutes, while fish weighing more than two kilograms should be steamed for 8-16 minutes. Place the fish flat on a plate and use two chopsticks to hold it up while steaming, or place it vertically on a plate and use scallion segments to prop up its belly and steam it. After turning off the heat, do not lift the lid immediately, but continue steaming for a while with the residual heat.

The timing starts from when the water boils. For big fish, we steam them at home over high heat for 13 minutes.

How to remove the fishy smell of steamed black fish

First, gut the fish, clean it, and put it in cold water. Then pour a small amount of vinegar and pepper into the water. This way, the fish will no longer have an earthy smell.

Second, if you like to eat fish but are afraid of the fishy smell, you can soak the fish in warm tea water. Generally, for a 500-1000 gram fish, mix a cup of strong tea into light tea. Soak the fish in the light tea for 5-10 minutes and the fishy smell will disappear.

Third, when slaughtering a fish, rinse the blood off as much as possible. Then add seasonings such as onion, ginger, and garlic when cooking, and the earthy smell can be basically removed.
