1. Prepare all the ingredients: (left-right) sesame oil - ginger powder - eggs - salt - chives - flour - (cold water)

2. Knead the dough: Add a little salt to the flour, stir while adding cold water in several times. Knead until evenly mixed (it’s OK if the surface is not too smooth!). Let the dough rest for 10 minutes.

3. Wash the chives, dry them and chop them. Choose narrow, thin and fresh leeks.

4. Pour a little more oil into the hot pan than needed to fry 2 eggs. Pour in the eggs and scramble quickly. (Fry over high heat, but make sure it’s done quickly!) When there’s still some egg liquid on the surface, turn off the heat. The residual heat of the pan can heat the remaining egg liquid to cook it and prevent the eggs from being overcooked. Let cool!

5. Mix the filling: add seasoning before wrapping. Add a pinch of ginger powder. Prevent the uncomfortable feeling of "heartburn" when eating leeks. If the leeks are too old and spicy, you can add "egg liquid" and stir evenly.

6. One and a half spoons of salt. Increase or decrease according to actual situation.

7. Add sesame oil, which not only enhances the flavor, but also wraps the leeks with oil to prevent them from releasing water.

9. Put water and a little salt in the pot for cooking dumplings. After boiling, add dumplings, and add cold water 2-3 times after boiling. (Adding salt not only makes the dumpling skin tasty and easy to cook, but also prevents the dumplings from sticking together~)
