How to make annual ring cake

The method of making annual ring cakes is not as complicated as everyone thinks. Prepare the tableware and seasonings first. Then start following the steps and remember to control the heat well.

1. First weigh 200 grams of flour, add half a spoonful of salt (seasoning spoon), prepare 110 grams of hot water at about 80-90 degrees, slowly pour it into the flour, stir with chopsticks, when the flour is in the shape of snowflakes, knead it with your hands, note: be careful of burns. Pinch a little bit. Finally knead it into a dough.

2. Cover the dough bowl with a wet cloth or lid, prepare chopped green onions and shrimp paste, and sprinkle salt on the chopped green onions.

3. Heat the pan, add vegetable oil, and after heating, pour the boiling oil into the chopped green onions. At this time, the chopped green onions in the bowl will "jump" up. Use chopsticks to mix the salt and scallion oil evenly and set aside.

4. After 20 minutes, take out the dough and continue kneading until it is smooth.

5.First use a rolling pin to roll the dough into a sheet like this.

6. Then, just like making Indian flying cakes, grab the dough and fly it over your head a few times. This will expand the dough and make it thinner and more resilient. The noodles are as smooth as silk.

7. Spread scallion oil and shrimp paste. If you don’t have shrimp paste, you can use hot sauce instead or omit it.

8. Roll up from one side, pinch both ends tightly, and stretch the noodles while rolling, like making ramen.

9. Roll up the pulled noodles, then spread them out or press them open with your hands. The circles look a bit like tree rings.

10. Put a small amount of oil in the frying pan. I poured the scallion oil that I had not used up just now. Then put the rolled dough into the pan. Fry over medium heat first, then low heat, and then medium heat again. After one side is fried, turn it over and pour a little more oil. This way the dough will be very crispy. Fry until golden brown and serve.
