How to make sweet-scented osmanthus red bean buns

4. Knead into a dough of moderate hardness.

5. Apply a little oil on the drawer.

6. Pour some warm water into the pot, put a steamer on it, put the dough on the steamer and cover the pot. Place in a warm place to let the sugar rise.

7. Let the dough rise to twice its original size. It is ready when a small indentation appears when you press it with your finger but it does not bounce back.

8. Take out the dough and place it on a dough board sprinkled with a little flour and knead it into a dough with a smooth surface.

9. Take an appropriate amount of dough and roll it into long strips, then pinch it into individual pieces weighing about 40 grams.

10. Press into round cake shape.

11. Roll the bun skin into a shape that is slightly thinner around the edges and slightly thicker in the middle.

12. Add appropriate amount of bean filling, wrap it into a bun shape, and flatten the opening.

13. Place the bean curd with the smooth side facing up on the panel, and roll it into an oval shape with your hands on both sides.

14. Let stand for 10 minutes.

15. Replace the clean cold water in the steamer. The water level should be about the second joint of the index finger from the bottom of the pot. Put the steamer on, brush with a little oil, and put the tofu in. There should be at least a finger-wide gap between each bean curd and the edge of the pot. Cover the pot and start steaming over medium heat.

17. After steam comes out, turn to high heat and steam for about 10 minutes, then turn off the heat. Let it sit for 10 minutes, then uncover the pot.
