Traditional chive box recipe

1. Add 1 teaspoon of salt to the 121 flour and stir with chopsticks while adding hot water. After it becomes flocculent, knead it into a smooth dough with your hands. Cover with a damp cloth or safety film and let it rise for half an hour.

3. Wash the chives, drain, chop and set aside.

4. Beat the eggs, add a little cooking wine, heat the oil in a pan, pour in the beaten eggs, stir quickly until they become egg crumbs and set aside.

6.2 Mix the chopped chives, chopped eggs and washed dried shrimps.

7. Divide the dough into small pieces and roll them into a round shape slightly larger than the mouth of a bowl.

8. Add salt and chicken essence to the filling and mix well.

9. Place appropriate amount of filling on half of the dough.

10. Cover the other side and press it shut.

11.1 Press the edges of the kneaded dough starting from one side.

12. Place it on the panel covered with thin noodles.

13. Pour a little oil into the pan, heat it up, and put in the prepared chive boxes.

14. Turn to low heat, cover the pot, and fry on low heat until one side is golden brown, then flip over.

15. Bake until both sides are golden brown.

Traditional chive dumplings are not complicated to make, and I believe you will think so after reading the above carefully. Of course, if you want to taste your own craftsmanship, then please give it a try. Maybe you will feel a little "sour" the first time, but you will still taste a different kind of "sweetness".
