How to make spicy pickled fish hotpot

1. Prepare a bag of pickled fish seasoning

2. Clean the grass carp, cut from the tail to the middle bone with a knife, and cut the fish into two pieces.

3. Cut the fish bones off the fish belly with a knife at a 45-degree angle and chop into small pieces for later use.

4. Cut the fish into butterfly slices. The slices should not be too thin, otherwise they will break easily during cooking.

5. Put the cut fish fillets into a bowl, add appropriate amount of cooking wine, two egg whites, a little salt, and enough flavor for the fish fillets. Then add starch, a little pepper powder and MSG, mix well and set aside

6. Put a little oil in the pot and heat it over high heat.

7. Put the fish bones into the pan and fry on low heat until both sides are slightly yellow.

8. Add ginger slices and a little pepper and fry until fragrant

9. Add dried chili peppers, garlic cloves and pickled cabbage, shake the pan and stir-fry for a while.

10. Add vinegar, cooking wine, a little lard, and a little salt

11. Add water and cook over high heat for 7-8 minutes, then turn to low heat and cook for two minutes

12. Put the fish fillets and the colander into the pot and cook. It is best if the soup can cover the fish fillets.

13. During the cooking process, use a spatula to gently flatten and spread the fish fillets.

14. Cook for about two minutes, remove the fish fillets and set aside. Add a little MSG and sugar to the soup.

15. Pour the soup into the hot pot and put the cooked fish fillet on top.

16. Sprinkle appropriate amount of pepper, dried chili, sesame and chopped green onion on the fish.

17. Add about 150 grams of oil to the pot and heat it to 70% to 80%

18. Pour the peppercorns, chili peppers, sesame seeds and chopped green onions, and the spicy and delicious "spicy pickled fish hotpot" is ready.
