Potatoes and pork ribs recipes

2 ribs, 2 potatoes, 300g beans, 2 small pieces of rock sugar, 2 tablespoons of dark soy sauce, 1 small piece of ginger, salt, chicken essence, 2 star anise, 2 bay leaves, 3-4 dried chilies, some Sichuan peppercorns, 3 galangal, 2 pieces of tangerine peel

1. Wash the ribs and cut into small pieces, pick the beans into small pieces, and cut the potatoes into dice for later use;

2. Heat a little oil in a pan until it is slightly hot, add rock sugar and stir-fry until melted;

3. Add the ribs and stir-fry until the ribs are evenly coated with syrup;

4. Add an appropriate amount of boiling water to cover the ribs, pour in dark soy sauce, add ginger and seasoning packet, cover the pot and simmer for about 20 minutes;

5. Add beans and potatoes, add a little salt, and continue to simmer until the soup is slightly dry;

6. Finally, add a little chicken essence and serve.

Tips

1. Put the cut potatoes into clean water, otherwise they will turn black.

2. Wait until the ribs are almost cooked before adding beans and potatoes (especially potatoes), otherwise they will become mushy in the pot!

3. You can replace beans and potatoes with your favorite vegetarian dishes, which will be just as delicious.

500g ribs, 2 potatoes, 3 curry cubes (I used Baimengduo, which I personally think tastes better than Gold Medal). 2 small green and red peppers, scallions and ginger. 3 tablespoons oil, 3 tablespoons soy sauce, 1 teaspoon salt

1. Blanch and clean the ribs, peel the potatoes and cut into dice, peel the ginger, and slice the green onion and ginger.

2. Heat oil in a pan, add onion and ginger, stir-fry until fragrant, then add the spareribs and stir-fry evenly.

3. Add curry cubes, pour enough water to cover the ribs by 1-2cm, add 3 tablespoons of light soy sauce, bring to a boil over high heat then turn to medium heat.

4. After stewing for 20 minutes, add potatoes and continue stewing on medium-low heat for another 20 minutes. When the soup becomes thick, add chopped green and red peppers and serve. Add salt according to your taste 5 minutes before serving.
