How to make homemade pork floss rolls

1. Mix high-gluten flour, low-gluten flour, sugar, salt, dry yeast, water, milk powder, and eggs and knead until it is fully mixed.

2. Add butter and knead until the expansion stage

3. Ferment at about 28 degrees for about an hour (ferment until 2.5 times larger). Press the fermented dough to release the gas, knead it into a ball, and ferment it for 15 minutes.

4. Use a rolling pin to roll the fermented dough into a square sheet, the size of which should be consistent with the baking tray. Place the rolled sheet on a baking tray lined with baking paper.

5. If there is any excess, cut it off with a knife so that it fits perfectly with the oven tray.

6. After the dough is spread out, it is fermented for the final time. The suitable temperature for the final fermentation is 38 degrees. Ferment for 40 minutes to 1 hour, until the thickness of the dough becomes twice as thick as before. After fermentation, take it out of the oven, preheat the oven to 180 degrees, brush the fermented dough with egg liquid, sprinkle with white sesame seeds, put it in the preheated oven, and bake until the surface of the bread is golden.

7. Place the baked bread upside down on another clean piece of baking paper, remove the baking tray, tear off the baking paper on the bottom, and wait for the bread to cool. When it cools down to the same temperature as your palm, spread salad dressing on the bottom of the bread (the side not brushed with egg and sprinkled with sesame seeds) and sprinkle with pork floss.

8. Roll up the bread tightly, wrap it in wax paper, and let it sit for half an hour to allow the roll to set.

9. After the bread is shaped, remove the wax paper and cut the bread into the number of sections you need.

10. Apply salad dressing on both ends of each section until they are covered with meat floss.
