Many people like to eat crab roe the most when eating crabs, but they will find that some hairy crabs have black crab roe. The main reasons for the black crab roe are insufficient heating time, the stomach of the hairy crab after a full meal, and the female crab after mating. The boundary between yellow and black is very obvious, so it should be removed during the production process, because eating black crab roe is not good for human health.

1. Causes of black crab paste

1. Insufficient heating time

Use a live female crab, heat it for about 10 minutes, take it out and cut it open. The crab roe is black in the middle and yellow around the edges. Put it back into the pot and continue heating it for one or two minutes. When you take it out, it will be all golden yellow, so it should just be that the heating time is not enough.

2. The stomach of a full hairy crab, that is, the black gelatinous solid in the crab roe

Some biological experts said that the black gelatinous substance next to the crab roe is the crab's stomach, also known as the crab urine bag. It is located in the center of the front edge of the back shell. It is a triangular bone bag with dirty sand inside, which is closely connected to the crab roe. Generally, the stomach of a crab appears smaller when it is empty, but after a full meal, its stomach swells and it appears that there is more black gelatinous substance. However, this is normal and the crab can be eaten normally after removing the black gelatinous substance.

3. Produced after mating of female crabs, the boundary between yellow and black is very clear

Crab roe is the ovary and digestive gland in the body. When the crab roe becomes larger and becomes bright orange, it means that the gonads of the female crab have matured. At this time, what is produced and discharged from the body are crab eggs, and the egg cells that remain in the gonads in the body are still part of the crab roe. Crab roe is not crab eggs, but its ingredients are basically the same as crab eggs.

2. What is black crab paste?

Crab stomach, the black thing is sludge.

There are four places where you cannot eat crabs:

1. Clean the crab stomach: The crab stomach is commonly known as the "crab urine bag". In the center of the front edge of its back shell is a triangular bone bag containing mud.

2. Crab intestine: a black line running from the crab stomach to the crab navel.

3. Crab heart: the "hexagonal plate" under the black membrane. Traditional Chinese medicine often says that crabs are extremely cold, and the crab heart is the coldest. The crab heart is a white hexagon, which is usually located under a black membrane in the center of the crab.

4. Crab gills: These are two rows of soft, eyebrow-like things that grow on the crab's abdomen. Crab gills are the crab's respiratory system and are not edible.

3. Precautions for eating crabs

1. Do not eat cooked crabs that have been stored for a long time: Stored cooked crabs are very easy to be invaded and contaminated by bacteria. Therefore, crabs should be cooked and eaten immediately and not stored. If you cannot finish it, the leftovers must be kept in a clean, cool and ventilated place (preferably in the refrigerator), and must be put back into the pot and cooked and steamed thoroughly when eating.

2. Avoid drinking tea: Avoid drinking tea while eating crabs or within 1 hour after eating crabs. Because boiling water will dilute stomach acid, and tea will cause certain components of the crab to coagulate, which is not conducive to digestion and absorption.

3. Don’t eat too much: Even if you are greedy, you have to resist: because crab meat is cold in nature, it is not suitable to eat too much. People with weak spleen and stomach should pay special attention to avoid abdominal pain and diarrhea.

4. Do not eat raw crabs: Crabs generally feed on animal carcasses or humus, so the crab's body surface, gills and gastrointestinal tract are covered with various bacteria and sludge. Crabs often carry cysts of lung flukes and Vibrio parahaemolyticus. If not sterilized at high temperature, lung flukes can enter the human body and cause lung damage.
