How to make Mocha Sesame Chiffon Cake

1. Prepare all the materials;

2. Separate the egg yolk and egg white and put each into a bowl (the bowl for egg white must be free of water and oil);

3. Pour cocoa powder into coffee liquid, stir evenly, then pour corn oil into it and stir continuously until emulsified to form coffee cocoa butter paste;

4. Add 10 grams of white sugar to the egg yolks and stir evenly. Use the remaining 45 grams of white sugar to beat the egg whites for later use.

5. Pour the cocoa coffee oil paste into the egg yolk liquid and mix well;

6. Mix the low-gluten flour and coconut powder evenly, and sift them into the coffee and cocoa butter paste twice;

7. Stir in a "Z" shape until there is no dry powder, and it becomes a coffee, cocoa and egg yolk batter. Sprinkle black and white sesame seeds on it;

8. Add a few drops of lemon juice to the egg whites, beat with an electric whisk at medium speed until it becomes fish-eye bubbles, then add 15 grams of white sugar;

9. Continue to beat the egg whites until lines appear, then add 15 grams of white sugar;

10. When the egg whites continue to be beaten and the lines do not disappear, add the last 15 grams of white sugar;

11. Adjust the egg beater to high speed and beat until the egg whites stand upright when the egg beater is lifted. This means the egg whites are whipped.

12. Use a mixing knife to scoop out one-third of the egg whites and add them to the coffee, cocoa and egg yolk paste. Stir well by cutting and stirring.

13. Pour the stirred coffee, cocoa and egg yolk paste into the remaining egg whites;

14. Mix thoroughly by cutting and stirring;

15. Pour the cake batter into the mold, lift the mold and shake it down a few times with a little force;

16. Immediately put it into the oven preheated to 130 degrees, in the middle and lower layer, and it will be ready for 70 minutes;

17. After it comes out of the oven, lift up the mold, shake it down a few times with a little force, and immediately turn it upside down on the beer bottle;

18. After drying for two hours, remove from the mold and place on a plate;

19. Cut into pieces and eat;
