6. Heat the Sprite, add the softened gelatin sheets when it is warm, stir well, wait until the gelatin sheets are completely melted, add RIO and stir well, add 3 drops of lemon essence

7. Divide into 2:1, add three drops of blue pigment to the larger portion, and half a drop of blue pigment to the smaller portion, adjust to your favorite color (the smaller color should be lighter), and refrigerate for more than four hours.

8. Prepare the mousse ingredients. Soak the gelatin sheets in cold water until soft.

9. Add sugar to whipped cream and beat until it becomes a thick milkshake.

10. Heat the gelatin sheets and 60g yogurt together in water until they melt.

11. Let it cool down a bit, add it to 240g yogurt, add lemon juice and mix well, add whipped cream and mix well, add 10 drops of lemon essence and mix well

12. Pour into the mold and refrigerate overnight

13. Use a hair dryer to heat the edges to remove the mold, put it in the refrigerator for a while, surround the edges with cake paper, and tie with a ribbon.

14. Crush two digestive biscuits, put them into the cake, and press them slightly to make the beach.

15. Use a spoon to break the light-colored ocean into irregular pieces and place them in the middle.

16. Cut the darker color into pieces and fill the remaining cake with it. The color changes to create an ocean feel.

17. Add coconut flakes to create the feeling of waves, and then add white chocolate shells and pearl sugar according to your preferences.
