3. Knead the dough into a smooth dough with your hands and let it rise for at least 1 hour.

5. Add scallions to a cold pan with cold oil and fry over low heat. You can use the whole scallion or the white part of the scallion. Personally, I think the white part of the scallion is better.

7. Pour the mixture into the small bowl containing flour in step 4 while it is still hot, stirring constantly until it becomes smooth and tender.

8. Cut the green onion into chopped green onions, put them into a small bowl, then add all the other ingredients of chopped green onions, stir well, and the chopped green onions you will use later are ready.

9. Apply a thin layer of oil on the silicone mat, move the proofed dough onto the silicone mat, and flatten it with your hands.

10. Use a dough rolling machine to roll out the dough into a thin rectangular sheet of a certain thickness. Not too thick and not too thin.

16. Roll it up from bottom to top, and do the same for the other 8 pieces.

17. Then start from the first roll you just made and press the middle position with your hands. You can add sesame seeds here or not. I only remembered to take pictures after I made a few, so my hands are covered with sesame seeds.

18. Bring up the two ends, flatten them, and then use your hands or a dough ruler to shape them into an oval or round shape.

19. Sprinkle cooked white sesame seeds on both sides. Press it to blend it into the dough to prevent the sesame seeds from expanding and falling off during baking.

20. The dough can be rolled out with dough to make it a little thinner, but not thin slices, it should be thick slices! About 1.5-2cm. Too thick or too thin is not good!

21. Brush a layer of oil on the non-stick baking tray, place the prepared dough pieces on them at intervals, and brush another layer of oil on the surface of the dough pieces.

22. It is best to roll it out into a thinner and larger size and bake it in two batches. I was lazy and flattened it with my hands, so I squeezed it all in directly. Don’t learn from me.

23. Preheat the oven to 175 degrees in advance. I usually start preheating after cutting the dough into 9 equal parts.

24. Place it in the middle layer of the preheated oven and bake at 170 degrees for 6 minutes.

25. When you see the surface is obviously bulging, take out the baking tray and turn each pancake over. You can use your hands or clamps.

26. Return it to the oven, turn the temperature to 200 degrees, and bake for 7-8 minutes until the surface is slightly yellow and crispy. It depends on the thickness. Generally speaking, it takes about ten minutes to bake.
