Henry IV Fillet Steak Recipe

7. Take a pot, add appropriate amount of water, add a little low-gluten flour, squeeze in the juice of half a lemon, mix well together with the squeezed lemon juice and bring to a boil. Cook until the artichokes can be easily pierced with a knife.

8. Take out the artichoke and wash off the mucus on the surface. In another pot, add 10 grams of butter and appropriate amount of water and cook the artichokes.

9. Take out the plush part in the middle and set aside.

10. Use a potato melon baller to scoop potatoes into balls and fry them in salad oil until cooked.

11. Drain the salad oil and add 15 grams of butter and fry until fragrant.

12. Heat the steak pan over high heat until smoking, then put in the steak. Do not stir, fry for 1 and a half minutes.

13. Pick up the pork, turn it 90 degrees and fry for another 1 and a half minutes.

14. Turn over and fry two more pieces for one and a half minutes. Then roll and fry the sides.

15. Take out and place on a rack, cut off the binding wire, place on a plate, cover with tin foil, and let the steak rest for 5 to 7 minutes.

16. Place the potato balls on the artichokes, heat them in the butter pan used to fry the potatoes, and grind some sea salt to season.

17. Use a mold with the same diameter as the steak to make round slices of toasted bread, spread them with butter and bake in the oven until golden brown.

18. When serving, place toasted bread slices under the steak, top with potato balls with artichokes, add appropriate amount of Béarnaise sauce, and top with appropriate amount of watercress. Done.

19. Cut it open and you will see that the steak is nearly medium-rare, tender and juicy.
