Vegan Mapo Tofu Recipe

Only by eating well can we have a healthy body and truly enjoy the beauty of life. Unfortunately, many people are unwilling to cook for themselves, which results in health problems and deep regret. In fact, the vegetarian version of Mapo Tofu is simple to make, and this dish is rich in nutrients, making it one of the most recommended dishes.

1. Cut the tofu into cubes.

2. Remove the red skin of peanuts, crush them and set aside.

3. Prepare auxiliary materials. Chop the garlic and shallots, and use the green onion whites and leaves separately. Mash the Pixian bean paste a little with a spoon.

4. Boil water in a pot, cook the tofu, add appropriate amount of salt, and turn off the heat two minutes after boiling. Pour the tofu and water into a container and set aside.

5. Stir-fry the ingredients. Heat peanut oil in another pan, add Sichuan peppercorns and fry until fragrant. Drain and transfer to a container for later use, or discard directly. Add Pixian bean paste, stir-fry until red oil comes out, add minced garlic, scallion, and chili, add cooking wine, light soy sauce, and sugar, continue to stir-fry, and finally add chopped peanuts.

6. Fried tofu. Pour out the water from the tofu and then pour it into the pot. Since the tofu has absorbed all the water, there is no need to add water. The amount of water in the pot will increase significantly after the tofu is put into the pot. Shake the pot so that the tofu is evenly coated with the sauce, and stir-fry gently with a spatula evenly. Add appropriate amount of water starch to thicken. Turn off the heat after boiling for about three minutes.

7. Serve on a plate, garnish with the remaining chopped peanuts, and then garnish with the fried Sichuan peppercorns. You can also leave out the Sichuan peppercorns, but I personally think they make it more appetizing! Drizzle with sesame oil and sprinkle with green onion leaves. It’s delicious and can be served on the table!
