2. Steamed Spare Ribs with Pumpkin

Material

500g spare ribs, 1 small pumpkin, 2 chili peppers, 1 scallion, 1 chive, 1 piece of old ginger, 1 tablespoon (15g) black bean sauce, 1 teaspoon (5ml) cooking wine, 5g tangerine peel, 1 teaspoon (5g) sugar, 1/2 teaspoon (3g) black pepper, 2 teaspoons (10ml) dark soy sauce, 1/2 teaspoon (3g) salt, 1 tablespoon (15ml) oil

1. Wash the ribs with water and chop them into 3cm long pieces; cut the green onion and ginger into thin slices, chop the chili peppers and set aside.

2. Bring the water to a boil over high heat, add the spareribs, and cook over medium heat for 30 minutes until the spareribs are 80% cooked. Remove from the heat and drain.

3. Heat the oil in a wok over medium heat. When the oil is 50% hot, add the fermented black beans, sliced ​​scallions and ginger and stir-fry until fragrant. Add the cooking wine, tangerine peel, sugar and dark soy sauce and stir-fry until fragrant. Add the boiled spare ribs and chopped chili peppers, stir-fry evenly, add pepper and salt and mix well. Turn off the heat and let the fried ribs marinate for 5 minutes to make the ribs more flavorful.

4. Wash the pumpkin with water, cut it in half, remove the pulp and place it on a plate.

5. Put the fried and marinated ribs into the pumpkin cup, put it into the steamer, and steam it over high heat for 20 minutes, until the pumpkin and ribs are cooked through, then sprinkle with chopped green onions.
