How to make stir-fried chicken

1. Wash the chicken, cut it into small pieces, sprinkle with salt, a spoonful of starch, and a small spoonful of white wine (to enhance the flavor of the chicken and make it easier to remove the bones after stir-frying);

2. Put a proper amount of oil in the wok, twice the amount of oil you usually use for cooking, and slowly fry the dried chili peppers, Sichuan peppercorns, half the amount of onions and ginger over low heat until fragrant. Remove the peppers when they turn bright red.

3. Heat the remaining chili oil in the pot. The amount of oil should be enough to fry the chicken. When the fire is 50% hot, add the scallion and ginger slices and stir-fry until fragrant. Add the chicken and stir-fry over medium heat until the chicken turns white. Remove the chicken and pour out the excess oil in the pot.

4. When the oil pan is heated to a point where it smokes slightly, quickly put in the fried dried chilies and chicken. After they are fully mixed, add salt, a spoonful of soy sauce for coloring, and half a spoonful of sugar, and stir-fry until the chicken is fully cooked.
