1. First, marinate the chicken with a little fish sauce and sugar for 15 minutes. Then add cornstarch, water and oil and mix well. Add oil (about 1 tablespoon) on high heat and stir-fry the chicken until cooked. Set aside.

2. Bring coconut milk, lemon leaves and basil leaves to a boil over high heat. Turn off the heat and simmer for 10 minutes. Filter the residue and set aside.

3. Heat oil (about 1 tablespoon) over high heat, add green curry and stir-fry until fragrant. Add onion and 1/2 teaspoon salt and stir-fry until soft. Add coconut milk, eggplant and chicken and stir well. Bring the sauce to a boil, turn to medium heat and simmer for 4 minutes with lid on. Turn off heat, add basil leaves and stir well. Serve.

Fried Green Eggplant with Garlic Sauce

Ingredients: Green eggplant, red bell pepper, garlic, salt, water, starch, olive oil

1. Chop 2 cloves of garlic + a little bit of chopped red pepper + a pinch of salt + 2 spoons of boiled water, stir well, cover with plastic wrap and chill.

2. Cut a green eggplant into semicircular slices, marinate with salt, drain the water, mix with a little starch, and slice thinly.

3. Fry the eggplant slices in olive oil, pile them on a plate, pour the chilled garlic juice on them when eating and mix well.
