1.1 Soak freshly sliced ​​tripe for 15 minutes; boil water in a pot, put the tripe in and blanch it until the water boils again, then take out the blanched tripe and put it in cold water until the heat is completely gone, then take it out and drain

2.2 Cut the green onions into small pieces for the red oil, cut the rest into shreds, slice the ginger, cut the garlic into small pieces, and chop the coriander.

3. Put more oil in the wok than usual, then add the red oil seasoning into the cold oil, turn on the fire and heat until all the light-colored ingredients turn visibly yellow.

4. Put chili powder in a bowl, put a strainer on it, pour the hot oil into the bowl through the strainer, discard the filtered ingredients, and mix the oil and chili powder in the bowl to make red oil

5. Add salt, sugar, soy sauce, and rice vinegar to the prepared red oil, mix well, and mix with beef tripe and chopped green onions. Serve with a little coriander.
