How to make purple sweet potato flavored snowy mooncakes

1. Prepare the ingredients and put them into the pot

2.1 Wash the purple sweet potato, peel it, cut it into thin slices, and steam it in a pot. Mash into purple sweet potato puree. (There are extra purple sweet potatoes here) Weigh another 60 grams of purple sweet potato puree and knead it into a ball with the previous rice paper. As shown in the figure

3.2 Add water to make it into a paste, stirring while pouring water until there are no particles. Finally, add 20 grams of oil and mix well. Put it on the gas stove and turn on the lowest heat. Keep stirring while cooking, just like cooking rice paste. Cook until it's cooked into a lump and you can't stir it anymore. As shown in the figure

4.1 Then weigh 30 grams of dough and 20 grams of stuffing and roll into a ball. Flatten the skin, fill it with red bean paste and roll it into a ball

5.2 Prepare cooked glutinous rice flour and red bean paste filling

6. Put it into a 50g mooncake mould, press it, and then turn it upside down. A snow skin mooncake is ready.
