1.1 While marinating the meat slices, prepare other seasonings. First prepare a bowl of batter, which requires a 1:1 ratio of flour and starch, and then add an appropriate amount of water. Don't make the batter too thin. Then prepare a portion of onion, ginger, and garlic. Cut the onion into sections, and the garlic and ginger into slices. You also need a portion of sweet and sour sauce. Mix soy sauce, sugar, cooking wine, salt, vinegar and pepper water. Finally, you need a little water starch to thicken it, or you can directly mix the water starch into the sweet and sour sauce

2.2 Cut the pork into 0.5 cm thick slices, put them into a container, add salt, sugar, cooking wine, and pepper powder to marinate

3. Now you can fry the meat slices. Pour a proper amount of oil into a small pot, heat it up, coat the meat slices with a layer of batter and put them in. After the color changes, remove them from the oil and drain.

4. Leave some oil in the pot, sauté the scallion, ginger and garlic, then pour in the sweet and sour sauce, bring to a boil, pour in the meat slices, stir-fry for a few times and it is ready to serve. Sprinkle with chopped coriander and chopped green onions when eating
