1. Prepare the necessary materials.

2. Coat the surface of the cleaned tongue fish with a thin layer of starch.

3. Add appropriate amount of cooking oil to the pan, and when the oil is warm, put in the tongue fish coated with starch (do not flip the fish randomly when frying, be patient and wait until one side is fried thoroughly before turning it over).

4. While frying the fish, roll the green onions, chop the chili peppers, mince the garlic, and shred the ginger for later use.

5. When the fish is fried until both sides turn yellow, remove from the pan and set aside.

6. Add oil to the wok. When the oil is 70% hot, add the chopped onion, ginger and garlic and stir-fry until fragrant.

7. Add light soy sauce, dark soy sauce and white sugar and stir-fry evenly.

8. Add appropriate amount of water, enough to cover the fish.

9. Add the fried fish and appropriate amount of cooking wine and sugar.

10. Simmer over low heat until the soup thickens, place the fish on a plate, add chopped coriander and chicken essence to the remaining soup, turn off the heat, stir evenly, and pour over the fish.
