How to make durian light cheesecake

4.1 Add durian flesh into the egg yolk paste and mix well.

5.2 Remove the durian core and mash it into paste.

6.1 Add a few drops of lemon juice to the egg whites and beat at low speed until coarse bubbles form.

7.2 Sift in low flour and mix well.

8. Add 30 grams of fine sugar in three batches and beat at medium speed until wet foam is formed, about 70% distributed.

9. Take 1/3 of the egg white and add it to the egg yolk batter and mix well.

10. Pour it back into the egg whites and mix quickly until evenly mixed.

11. Pour the batter into the mold, shake it lightly on the table a few times to expel the bubbles inside, put it into a flat baking pan, pour in warm water to a height of about 3/4 of the mold, put it in the oven and bake at 170 degrees for about 20-30 minutes, then turn to 150 degrees for 40 minutes.

12. Remove from oven and demould after cooling.
