The secret of delicious sauerkraut dumplings

Dumplings are a delicacy and a representative of China. It has become a habit to think of dumplings when mentioning Chinese people. Dumplings are food made of stuffing and skin. Different stuffings have different flavors. Some people prefer meat fillings, while others prefer sour dumplings, such as sauerkraut dumplings. If you want to make delicious sauerkraut dumplings, the sauerkraut filling must be well-seasoned. Let’s take a look at different ways to make dumplings with sauerkraut filling.

1. Dumplings with sauerkraut filling

Ingredients: sauerkraut, minced meat, onion, ginger

  1. When making dumplings, be sure to use warm water to knead the dough so that the dough can rise better and be chewier. Soak the kneaded dough for half an hour.

  2. Add 25 grams of chopped green onion and 10 grams of minced ginger into the pork filling, then add 10 milliliters of soy sauce, 3 grams of pepper powder, and 15 milliliters of cold boiled water and mix well, then add a small amount of vegetable oil and stir the meat filling again, stirring the meat filling in one direction.

  3. Rinse the sauerkraut with clean water, squeeze out the water and chop it into small pieces.

  4. Mix the chopped sauerkraut and the previously seasoned minced meat together, add about 8 grams of salt and stir in one direction, and our stuffing is ready!

    Ingredients: sauerkraut, lard residue

  1. Take the sauerkraut out of the jar and cut it in half with a knife.

  2. Then cut the sauerkraut into thin strips and chop it into stuffing. The filling does not need to be chopped very finely, it will be fine if it is roughly chopped. Soak the chopped filling in a basin of cold water for a while.

  3. After soaking, use your hands to squeeze the sauerkraut into a small ball so that the water in the sauerkraut can be squeezed out better. After squeezing, place it in a stainless steel basin and set aside.

  4. Put the oil residue on the chopping board and chop it into small pieces with a knife. Put the chopped oil residue and sauerkraut into a bowl.

  5. Add chopped green onion, chopped ginger, MSG, dark soy sauce, light soy sauce, sesame oil, salt, thirteen spices and other seasonings into the bowl with the oil residue and sauerkraut. Taste the saltiness while adding the ingredients. Add a little at a time and don't add too much at once.

  6. After mixing the stuffing, our whole family can gather around the table to make big dumplings with our favorite sauerkraut and oil residue stuffing.
