How to make Guilin beer fish

Material

Fresh carp, beer, tomatoes, green peppers, celery, and onions.

Method 1

1. Heat oil in a pan and sauté ginger slices to prevent the fried fish from sticking to the pan.

2. After the ginger slices are sautéed, put the washed and dried fresh fish into the pot. Fresh carp needs to be divided into two halves and a few cuts made on the back of the fish.

3. After frying the fresh carp, sprinkle with the remaining ginger slices and garlic cloves, pour in beer, cooking wine, light soy sauce, chicken essence and salt, and simmer for 5 minutes.

4. Add the chopped celery and onion and continue cooking for 10 minutes.

5. Add tomatoes and a small spoonful of vinegar and serve.

Method 2

1. Wash the grass carp, remove the internal organs, and cut into large pieces; wash the tomatoes and cut into small pieces; wash the green peppers and cut into sections; cut the ginger into large slices, peel and wash the garlic and set aside.

2. Heat the oil (45ml) in a wok over medium heat until it is 50% hot, add the fish pieces and fry until golden brown.

3. Heat the oil in a wok (the remaining 30 ml) over high heat until it is 70% hot, add ginger slices, garlic cloves, Pixian bean paste, green pepper segments, and dried chilies and stir-fry.

4. After the aroma comes out, pour in light soy sauce and beer. When the beer boils, add the fried fish pieces and Guilin fermented bean curd. Change to medium heat and simmer for about 20 minutes. When the soup is almost dry, add the tomato cubes. Change to high heat and cook until the soup is thick before serving.
