Ingredients: 2 eggs (110 grams), 4 grams of salt, 100 grams of water, 550 grams of flour.

1. Crack two eggs into a bowl.

2. Add 4 grams of salt.

3. Add 100 grams of water. (I used 90 grams, and after adding the flour, I found it was a bit dry, so I added a little more.)

4. Add 550 grams of flour.

5. Use chopsticks to stir until it becomes floc-like.

6. Wrap it in a Canon plastic bag and let the sugar ferment for more than half an hour.

7. Start the electric noodle press and put the noodles in little by little. Use the first gear to operate, and then press the dough sheet into a whole piece little by little.

8. Press repeatedly to form a smooth and regular dough.

9. Change to level 2 to produce dough slices. Cut the dough into suitable lengths.

10. Change to level 4 and produce a dough sheet.

11. Change to level 5 and produce a dough sheet.

12. Apply a little starch on both sides of the dough to prevent sticking.

13. Cut the dough into appropriate lengths, change the noodle machine to the noodle making mode, and make the dough into strips.

14. Pack the noodles into Canon sealed bags according to the amount for one meal for the whole family.

1. Advantages: Simple storage method and easy to use.

2. Disadvantages:

1. The weight must be distributed in advance before freezing, otherwise it will be difficult to disperse.

2. Occupies the freezer space of the refrigerator.

3. The seal must be good. If it is exposed to air, it will easily break after being frozen for a long time.

4. The dough must be hard. Only chewy noodles can withstand being hung by chopsticks and will not break easily.

5. For frozen noodles, wipe off the starch in advance and store them in a sealed bag. Without moisture, the noodles will not stick together. When cooking, they can be separated with a light flick of chopsticks.

6. For frozen noodles, it is best to weigh a bag of appropriate weight according to the family's meal intake and store it directly in the pot when eating. The noodles are difficult to separate after being frozen. There are three people in my family, and 250 grams is enough for us to eat. This is just for reference.

7. When drying noodles, be sure to choose a cool place. Exposure to the sun can easily cause the noodles to bend and become difficult to place.

8. Dry the noodles for about half a day and check carefully to see if they are completely dry. If it is not completely dry before storage, it will easily grow hair.
