What is the authentic method of making Putian braised noodles?

Putian's braised noodles are quite popular. Many people like to eat Putian's braised noodles. Not only does it taste good, but it is also intriguing. Noodles can nourish the stomach and enhance immunity. People with weak constitutions such as bad stomachs or anemia can eat more noodles. Many people do not know how to make the authentic Putian braised noodles and can only buy them. Sometimes you may not get the authentic ones. What is the authentic way to make Putian braised noodles? 1. Prepare the ingredients

Braised meat (300g), Chinese cabbage (3 pieces), Shiitake mushrooms (4 pieces), Coriander (2 pieces), Oil noodles (150g), Red mushrooms (3 pieces). Seasoning (1 bottle), 4 cups of water, 1 teaspoon of salt, 2 tablespoons of soy sauce, 4 tablespoons of wet starch, a little pepper, and 4 tablespoons of vinegar.

Second approach

1. Wash and cut the Chinese cabbage into strips. Soak the mushrooms until soft and cut into strips. Use two tablespoons of oil to fry the mushrooms first, then add the Chinese cabbage and fry until soft. Add seasoning (1) and bring to a boil. Reduce heat and add the broth.

2. Bring another half pot of water to a boil, add the noodles and cook until done, then scoop into a bowl.

3. When the meat is cooked and the sauce is thick, turn off the heat and add seasoning (2) and cleaned and chopped coriander.

4. Pour the noodles into a bowl and pour the cooked meat sauce over them before serving.

Ingredients for the stew: dried scallops, shrimps, dried clams, mushrooms, dried squid, lean meat, duck eggs, garlic

3. Preparation of stew

1. Cut mushrooms and dried squid into strips, soak them in water together with scallops for 15 minutes, drain and set aside. Slice the lean meat and dip it in sweet potato starch.

2. Chop the garlic and pour it into the oil to sauté until fragrant. Then add the mushrooms, dried squid, scallops and shrimps and stir-fry for a few times.

3. Boil water in another pot (the amount of water depends on the appetite, generally two people need about 1000ml of water), pour in the fried ingredients and lean meat in step 2.

4. After the soup boils, add starch, then break the duck eggs, stir evenly and slowly pour into the boiling soup.

5. After adding salt and MSG for seasoning, a pot of authentic braised noodle soup base is ready!

4. Precautions

While paying attention to the heat, the time to eat the noodles is also important. Generally speaking, the noodles should be eaten 3-5 minutes after they are out of the pot. Otherwise, the noodles will become mushy and will not have that taste. Therefore, for authentic Putian braised noodles, cooking a large pot of braised noodles is also very risky. If it takes too long, it will have to be thrown away. That’s not all, there are still many other ingredients: mung bean sprouts, leek segments, blanch in a little oil until cooked and then cool, garlic cut into very fine cubes and deep-fry over low heat until crispy (the same golden garlic cubes you get in Japanese noodle shops). Braised noodles have become a must-have dish at Putian people's wedding banquets, a must-have dish for every household during the Chinese New Year, and a must-order dish for Putian people living outside the country when they come across a Putian restaurant.
