Parmesan Bread Recipe

Everyone pursues a life of having food and clothing provided for them, but the reality is not so good. So if you live in reality, you will inevitably need to cook by yourself. In order to cook a dish well, you must have perfect methods and steps. So, let me teach you how to make Parmesan bread.

1.1 Mix all ingredients except cheese, knead into dough, cover, and autolyse (soak) for 30 minutes. Knead until the dough is slightly chewy. I kneaded it at the 1st gear of my KA for 1 minute and then at the 2nd gear for another 2 minutes. Add cheese and knead on low speed until combined, about 1 minute. I felt the dough was a bit dry so I added 15g more water. In fact, the dough will be much wetter after adding cheese, so don’t add water easily. However, the leaven I used is whole wheat, which absorbs more water, so the dough was just the right amount of dryness and wetness in the end. Place the dough into an oiled container and cover with plastic wrap

5. I took out the dough after 13 hours and left it at room temperature for 1 hour and 45 minutes to warm up and complete the secondary fermentation. Here you should use experience to judge whether the dough has risen (press the dough with your finger and it will slowly bounce back), not rely on time to decide

7. Pour the dough from the fermentation basket onto the bottom of a baking tray lined with baking paper and cut into pieces. This round dough does not require "ears". The method of cutting the bun is relatively simple. The knife should be inserted at a perpendicular angle to the dough and the depth should be appropriate so that the dough can expand symmetrically on all sides, but the cut marks should remain obvious.

8. Pour some boiling water into the baking pan and close the door. Take the dough, open the door, transfer it to the stone plate together with the baking paper, pour another cup of hot water in the baking tray, and close the door. Reduce the baking temperature to 460F (237C) and bake for 15 minutes. Remove the baking paper and the baking tray with water, reduce the baking temperature to 440F (226C) and bake for another 25 to 30 minutes until golden brown.
