Aunt Hannah's Cookies

1.1 While the butter is cooling, mix the baking powder, potato starch and all-purpose flour evenly and sift them for later use.

2.2 Melt the butter in a microwave or insulated water, and let it cool for later use

3.1 Add brown sugar (or granulated sugar) to the butter

7. Sift the powder into the liquid (my container was too small, so I changed to a bigger container and it was a mess)

8. Mix well and knead into a smooth dough (don't knead it as hard as you would bread, just make it into a ball). Maybe different flours have different water absorption, so I added an extra spoonful of butter in this step to make it a ball, otherwise it would be a bit loose. Please adjust it flexibly when you make it.

9. Cover the dough and place it in a cool place for about half an hour (if it is summer, I think you need to put it in the refrigerator), then take it out, scoop an appropriate amount of dough with a spoon, and slightly pinch it into small balls

10. Press it lightly with a fork (you can also use small balls to make it easier), and complete all the doughs one by one (I made 60 to 70)

11. Preheat the oven to 175 degrees, bake in the preheated oven for 25 to 30 minutes (the original recipe only baked for 15 to 20 minutes, I don’t know why, it may be because I baked two large trays together, in order to make them heated evenly, I took them out halfway and swapped the positions of the two trays of cookies up and down, so the actual baking time was extended). Anyway, the baking time is always based on the actual situation, and different ovens are different
