The noodles we usually buy are all processed by machines. There are many processes for making noodles. Generally, a noodle press is used to process fresh noodles. When using a noodle press to make noodles, the amount of water in the flour is relatively important. Under normal circumstances, about 150 grams of water can be added to one pound of noodles. Of course, an appropriate amount of salt should also be added, because the effect of salt can make the noodles taste more chewy.

The key to using a noodle press to process fresh noodles is to grasp the ratio of adding water. Generally, 150 grams of water is added to one pound of flour. About 2% of salt should be added to the water. The role of salt can make the noodles more chewy. The method is: add salted water to the flour, first stir with chopsticks until the water and flour are basically uniform, then stir thoroughly with your hands until the flour becomes small and uniform flakes, then put it into a noodle press and press it repeatedly into smooth flakes, then install a noodle cutter to cut it into noodles. If you don't use a noodle machine but knead it by hand, the amount of water should be increased to about 200 grams, and salt is even more important. If you add an egg, the noodles will be more chewy and will not be overcooked. First, knead it into a harder dough, cover it with a cloth or put it in a plastic bag to let it rest for about an hour, then use a rolling pin to roll it into thin slices, and then cut it into noodles with a knife.

Fresh noodles processing method:

Stretching method: The fully cooked dough is repeatedly stretched into noodles. This method is mostly manual and requires a lot of experience, and has very strict requirements on flour quality and maturation. Many famous noodles, such as longxu noodles and hollow noodles, belong to this category. Rolling method: Roll or knead the dough repeatedly into sheets, then cut into strips. Ingredients: 2 eggs (110 grams), 4 grams of salt, 100 grams of water, 550 grams of flour.

1. Crack two eggs into a bowl.

2. Add 4 grams of salt.

3. Add 100 grams of water. (I used 90 grams, and after adding the flour, I found it was a bit dry, so I added a little more.)

5. Use chopsticks to stir until it becomes floc-like.

6. Wrap it in a Canon plastic bag and let the sugar ferment for more than half an hour.

7. Start the electric noodle press and put the noodles in little by little. Use the first gear to operate, and then press the dough sheet into a whole piece little by little.

8. Press repeatedly to form a smooth and regular dough.

9. Change to level 2 to produce dough slices. Cut the dough into suitable lengths.

10. Change to level 4 and produce a dough sheet.

11. Change to level 5 and produce a dough sheet.

12. Apply a little starch on both sides of the dough to prevent sticking.

13. Cut the dough into appropriate lengths, change the noodle machine to the noodle making mode, and make the dough into strips.
