Signature Braised Pigeon

Ingredients: 500g pigeon meat Seasoning: 25g peanut oil, 4g salt, 2g MSG, 5g ginger, 3g star anise, 3g cinnamon, 15g sesame oil, 53g sweet noodle sauce, 5g shallot, 2g white sugar, 2g rice wine

1. Marinate the pigeon meat with refined salt, rice wine, scallion and ginger slices for 1 hour. 2. Take a small box, add 500 ml of clear soup, put in the pigeon meat, add cinnamon and star anise, steam it in a steamer, take it out, let it cool and chop it into small walnut pieces. 3. Put the wok on the fire, add peanut oil, heat it to 60% hot, add chopped scallion and minced ginger and fry until fragrant, then add sweet noodle sauce and stir well, add the soup of steamed pigeon, add pigeon meat, sugar and rice wine, simmer until the sauce is thick and the pigeon meat is well-flavored, then drizzle with sesame oil. Remove from the pan and serve
