1. Wash a fish, drain the water, and cut it into slices as shown in the picture.

2. Wash and prepare the scallions, ginger, garlic, onions and red peppers. Slice the ginger and scallions, smash the garlic, cut the scallions, and cut the peppers into wide strips.

3. Pour oil into the pan and wait until it is 50% to 60% hot. Slowly slide the fish pieces in, being careful not to splash the hot oil.

6. Prepare the sweet and sour sauce: salt: sugar: vinegar: cooking wine: light soy sauce: dark soy sauce: water = 1:3:4:3:2:1:8, measured with a teaspoon. Pour it into the pot. My sweet and sour sauce is a little less, so I will add more next time.

7. Add pepper powder and stir in the fish and ingredients.

8. Add green onions, cover, and simmer over low heat until the sauce is reduced. When the sweet and sour sauce is almost gone, turn off the heat and serve. If you like more sweet and sour sauce, you don’t have to dry it up. It’s especially good to pour it over rice~~~
