How to make Taiwanese kimchi

1. Pour water and sugar into a pot and boil until the sugar melts, then turn off the heat, add white vinegar and 1/4 teaspoon of salt, mix well, and let cool

2.1 Mix the cabbage and carrots with salt and marinate for about 1 hour until the leaves release water and become soft.

3.2 Cut the cabbage into large pieces, peel and slice the carrots, remove the seeds from the peppers and cut them into oblique slices, and flatten the garlic.

4. After squeezing out the juice from the leaves with your hands, rinse them repeatedly with cold water to remove the salt, then squeeze them dry.

5. Put the cabbage, carrots, peppers and garlic into a clean, oil-free container and pour in the cooled sweet and sour sauce.

6. Cover tightly and refrigerate for more than one day until the flavor is absorbed.
