1. Slice the bitter gourd.

2. Boil water in a pot. Put the bitter gourd into the pot after the water boils. Take it out when the water boils again. (This way the bitterness will be less)

3. Rinse the bitter gourd with cold water and squeeze out the moisture.

4. Beat the eggs in a bowl. After beating the eggs until bubbles form, pour in the bitter gourd and add seasoning. I only added salt and ground pepper. Stir well.
