The fish commonly used for cooking in our lives are mainly species such as Hualien, Grass Carp or Guizhou Fish, while Pomfret and Wuchang Fish are mostly steamed and are used relatively less frequently. So what are the specific differences between Pomfret and Wuchang fish?

Pomfret is a saltwater fish, and Wuchang fish is a freshwater fish. The appearance can also be distinguished.

Pomfret

Pomfret is a large tropical fish that is native to tropical and subtropical areas and is both edible and ornamental. The weight of Liuzhou pomfret is about 500-1500 grams per piece, and the flavor of the meat is similar to that of mullet. The unsaturated fatty acid W-3 ​​series contained in the fish meat is an important substance for reducing the occurrence of cardiovascular diseases. The cholesterol content is also lower than that of all animal foods. Pomfret meat is thick, has few bones, tastes good, and is rich in nutrients. It is a natural nutritional product. Liuzhou pomfret has a laterally flattened body in the shape of a disc, a relatively thick back, a terminal mouth, and no whiskers. Its body is white, its scales are silver, its tail is black, and its fins are linear. The combination of these four colors is extremely beautiful.

Wuchang Fish

One of the main freshwater fish in my country. However, its distribution range is narrow and its natural production is low, with the most famous production coming from Liangzi Lake in Hubei. Due to its fast growth, strong disease resistance, easy breeding and delicious meat, it has been introduced to various parts of the country since the 1990s and has become one of my country's excellent main freshwater farmed fish.

Pomfret belongs to the order Perciformes, family Pomfretidae. The body is short and tall, extremely laterally flattened, and slightly diamond-shaped. The head is small, the snout is round, the mouth is small and the teeth are thin. The pelvic fin of adult fish disappears and the caudal fin is deeply forked. The lower leaves are longer, the body is silvery white, and the upper part is slightly bluish-gray. It feeds on crustaceans.

Body shape: short and tall, extremely laterally flattened, slightly diamond-shaped, and about 20 cm long.

Head: The head is small, flattened and high. The snout is short, blunt and slightly protruding in front of the lower jaw. Eyes small, lateral position. There is a large arc-shaped bulge between the eyes, a small nose, two nostrils on each side, a round anterior nostril, a slit-shaped posterior nostril, and a small, slightly slanted mouth.

Jaw: Maxilla reaches below the anterior edge of the eye. There is a row of fine teeth in each jaw, which are arranged closely.

Gills: Small gill openings, short and weak gill rakers, sparsely arranged.

Scales: The scales are small, round and easily fall off. The lateral line has 110 to 130 scales and is high, almost parallel to the dorsal margin.

Fins: Dorsal fins IX-XII, I-42-48, starting point slightly in front of the anal fin. Anal fin VI-VII, I-41-46. The dorsal and anal fins are of the same shape, the fin spines are truncated, and the front ends of the fin rays are raised and sickle-shaped. Pectoral fins enlarged, 24-27. No pelvic fins. Caudal fin 17, deeply forked. The body is silvery white, slightly bluish grey on the upper part, and there are tiny black dots on most scales.

Morphological characteristics of Wuchang fish

Wuchang fish has a tall and laterally flattened body, with a body length of 165 to 456 mm, which is 2.1 to 2.2 times its body height. The body is blue-gray, with light-colored bases on the side scales.

The two sides are gray-black, forming several rows of deep and light longitudinal stripes on the sides of the body. The fins are gray-black. The body is flattened and tall, diamond-shaped, with a thick back, an arc shape from the back of the head to the starting point of the dorsal fin, an abdomen with ventral ridges from the starting point of the pelvic fin to the anus, and a wide and short caudal peduncle.

Difference: Wuchang fish has 13 and a half fish bones, while bream has 13 fish bones.
