Pork fat is skinless fat with no oil film on the surface. Compared with lard, it has a lower oil yield because it is oil boiled from fat and has only meaty flavor. There is no unique oily aroma of suet.

Lard contains a variety of fatty acids, with a comparable content of saturated fatty acids and unsaturated fatty acids. It can provide extremely high calories and is also rich in vitamin A and vitamin E.

3. What is lard?

Pork lard, also known as lard residue, is not just fat, but fat! Strips of fat on a pig's belly. Suet generally refers to this kind of raw fat. Pork lard is not made from fat, but rather the fat from the pig's stomach. It is very large and comes in layers, with oil wrapped in a thin film. If you are making pork oil, it should be lard.
