How to make braised spring bamboo shoots and abalone

1. Buy a live abalone, clean the surface with a toothbrush, and use a small knife to insert the tip of the knife into the shell and cut a few times.

4. Use your hands to squeeze out the contents of the circled area and throw it away.

7. Cut the slaughtered abalone several times horizontally and vertically (also known as flower-shaped cuts)

8. Peel the bamboo shoots, wash them, place them horizontally on the chopping board, hold the bamboo shoot head with your left hand, use the back of a knife with your right hand to loosen the bamboo shoots, and then cut them into inch-long pieces.

9. Heat the oil in the pan (use slightly more oil than usual for cooking), sauté ginger slices and scallions over medium heat until fragrant, then remove and discard.

10. Turn to high heat, add the bamboo shoots and stir-fry until they turn slightly yellow and a little burnt on the edges.

11. Add the small abalone and stir-fry for about 30 seconds

12. Add one tablespoon of cooking wine and stir-fry over high heat for 10 seconds

13. Turn to low heat. Add 0.5 tablespoon sugar

14. Add 1 tablespoon of dark soy sauce

15. Add 0.5 tablespoon soy sauce and stir fry evenly

16. Pour in half a cup of water and turn to high heat

17. After the pot boils, cover the lid and cook on medium heat for 10 minutes

18. Open the lid and turn to high heat to thicken the soup, sprinkle with chopped green onions and serve.
