How to make braised duck

1. Wash the duck, chop it into small pieces, and drain or wipe it thoroughly with kitchen paper (try to dry it as much as possible, otherwise it will be wet when frying and the effect will not be good); after heating the pan, put the duck pieces skin side down into the pan (do not add oil or anything else)

2. Slowly fry until the duck skin is oily and golden brown; then stir-fry for a while to make sure all sides of the duck are seared; if you feel that there is too much oil or it is too greasy, you can pour out some of the oil in the pan, but don't pour it out completely, because you will need to fry the spices next.

3. Add ginger, onion, garlic, dried chili peppers, dried peppercorns, bay leaves, star anise, cloves, and continue to stir-fry until fragrant

4. Add rice wine and stir-fry; then add brown sugar and stir-fry; then add seafood sauce and light soy sauce and stir-fry

5. When you feel that the duck is fully coated with the seasoning and all the flavors are blended, add an appropriate amount of water. I only added about 1/2 cup (you don’t need to add too much, because the duck has been fried and stir-fried for so long, and it is basically cooked, but not soft enough. Just add a little more water to simmer it until it is soft)

6. Cover the pot and simmer over medium-low heat for about 20 minutes, or until the tenderness you like

7. When stewing the duck, wash and cut the peppers into rings

8. After the duck is stewed soft, open the lid and stir-fry over high heat until the sauce is almost absorbed.

9. Add chili peppers and stir-fry until they are cooked. The taste is basically enough, but you should still taste it before serving. Everyone has different preferences for saltiness. If it feels bland, just add a few grains of salt.
