Double berry cake roll recipe

5. Add 30g of fine sugar into the egg yolk bowl and beat

6. The egg liquid becomes lighter in color and slightly thicker.

7. Add the beaten egg yolk into the egg white bowl and stir up and down with a rubber spatula.

11. Preheat the oven to 190℃, place a baking paper on the baking tray, and pour the mixed cake batter into the piping bag.

12. Start from one corner of the baking pan and use a piping bag to squeeze the cake batter in, arranging them one by one.

13. Place the baking tray in the preheated oven and bake at 190℃ for 12 minutes.

14. Let the baked cake base cool

15. Take 20g dried cranberries and chop them; stir 10ml rum, 15ml honey and 35ml strawberry jam and set aside

16. Add 5g icing sugar to 100ml whipping cream and beat until thick enough to stand upright

17. Place a layer of baking paper on the table, turn the cake over, and remove the baking paper.

18. First, spread the prepared jam on the cake base.

19. Apply a layer of whipped cream, and then spread the dried cranberries evenly on the cream.

20. Use the sushi mat to roll up the cake in the same way as sushi rolls.

21. Remove the baking paper and slice the cake. The delicious cake roll is ready. Enjoy it with yogurt or a cup of coffee for a romantic afternoon tea.
