How to make Opera House Cake

1. Preheat the oven to 215℃, and place two pieces of baking paper on the baking tray. First, melt 45 grams of butter and set aside

8. Divide the batter into two baking trays lined with baking paper, bake in the oven at 215℃ for 8-10 minutes, take out of the oven and let cool

9. While the cake is cooling, we prepare the coffee syrup. Pour 110 grams of water, 10 grams of instant coffee and 45 grams of fine sugar into a small pot and bring to a boil. Remember to stir constantly. Pour into a bowl and let cool for a while before use

10. Continue making the coffee cream filling. 1. Dissolve 12 grams of instant coffee with 25 grams of hot water and set aside. 2. Pour 145 grams of fine sugar and 45 grams of cold water into a pot and boil, stirring constantly. After boiling, continue to boil for one minute. If you have a thermometer, boil it until it reaches 110℃, then pour it into a bowl. 3. Mix an egg yolk and a whole egg evenly. It is recommended to use an electric egg beater. 4. Then slowly pour the syrup into the egg yolk liquid like a thread, stirring quickly while pouring, otherwise it will become egg drop soup. 5. Pour in coffee liquid and stir. 6. Next, add the room temperature butter in batches and stir.

11. The whipped coffee cream filling will be smooth and fine without any particles. Set aside for later use.

12. Next, we prepare the chocolate ganache. 1. Bring milk and cream to a boil and turn off the heat. 2. Add chocolate and stir until dissolved. 3. Add butter and continue stirring until there are no chocolate and butter particles. 4. Set aside and let cool

13. After the chocolate ganache has completely cooled, prepare for the next step: 1. Cut the two cakes in half each. 2. First, take a piece of cake and brush it with a layer of coffee syrup that we prepared at the beginning. 3. Take half of the coffee cream filling and spread it on the first piece of cake. 4. Place the second piece of cake and brush it with syrup and chocolate ganache. 5. Repeat steps 2, 3, and 4 with the remaining two slices of cake.

14. Put the prepared cake in the refrigerator for 1-2 hours and then decorate it as you like. I had a little coffee cream filling and chocolate ganache left so I decorated it simply. Cut off the sides for yourself, then cut the remaining cake into small rectangles to eat or give away!
